Job Overview:
The Executive Steward oversees and directs the entire stewarding operation to ensure the highest standards of cleanliness, sanitation, and organization across all food and beverage venues. This role manages stewarding staff, maintains inventory of cleaning supplies and equipment, and ensures all kitchen and back-of-house areas meet health, safety, and hygiene regulations. The Executive Steward collaborates closely with the culinary and food & beverage teams to support efficient service, optimize workflow, and uphold operational excellence. Responsible for budgeting, training, scheduling, and enforcing procedures, the Executive Steward plays a key leadership role in maintaining a safe, efficient, and well-organized working environment.

Duties and Responsibilities:
- Manages and inventories all equipment, chemicals, cleaning supplies, small wares, chinaware, glass, and silver, and ensures consistently adequate and maintained supplies of each.
- Assists in coordinating purchase needs to properly operate Food & Beverage needs and complete requisitions.
- Inspects supplies, equipment, and work areas to ensure efficient service and conformance to standards.
- Maintain records of inventory, breakages, orders, and supplies and make recommendations for the purchase of new equipment or supplies as needed to management.
- Oversees equipment storage and distribution according to established standards.
- Oversees the cleanliness of the kitchen, dining and public areas, service ware, equipment, and floors, daily to ensure a high standard of cleanliness and hygiene consistent with all health and safety regulations and standards.
- Enforces proper use and cleaning of all dish area machinery.
- Ensures all food holding and transport equipment is in working order.
- Develop and implement proper cleaning routines and protocols to ensure the work is completed in a timely and efficient manner.
- Ensures Stewarding staff are properly trained regarding sanitation, equipment handling, and chemical usage.
- Implements and regularly teaches all required safety and standard operating procedures, updating stewarding staff on new cleaning and hygiene techniques.
- Supervises employee's ability to follow loss prevention policies to prevent accidents and control costs.
- Understand the impact of the department's operation on the overall property's financial goals and objectives.
- Ensure compliance with all applicable laws and regulations including health, food handling, safety, cleanliness, hygiene, sanitation, and alcohol awareness standards, and prepare for health inspections.
- Assist with coordinating and communicating with all outside vendors and services, including the Health Department and all other regulatory departments.
- Encourages and builds mutual trust, respect, and cooperation among team members.

Job Requirements: (please ensure you meet the listed requirements prior to applying)
- High School diploma or GED– required
- Bachelor’s Degree in a Related Field AND two (2) years of Supervisory experience– required
- OR Four (4) years’ experience in a management or Executive Steward position– required
- OR An Associate Culinary Degree AND five (5) years of experience as a cook – required
- OR Six (6) years of supervisory or Sous Chef experience in a kitchen environment - required
- OR Three (3) years’ experience in a Supervisory position with Wind Creek Hospitality– required
- Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment.
- Knowledge of HACCAP standards.
- Ability to obtain and maintain Food Handler Certification.
- Advanced knowledge of food preparation techniques
- Highest level of commitment to client satisfaction and quality standards.
- Strong understanding of sanitation standards, cleaning procedures, and chemical safety in a food service environment.
- Knowledgeable of all chemicals and specific types of machinery in this department.
- Familiar with industry trends and best practices.
- Strong leadership and management skills.
- Ability to work well in a team environment and coach and develop team members.
- Proven ability to manage multiple priorities, work under pressure, and meet deadlines.
- Self-starter with excellent organizational, multitasking, and problem-solving skills.

- Demonstrated strong performance in analytical, innovative, and critical thinking, strategy, and collaboration. Proficiency in computer systems. Willing to work odd and irregular hours including nights, weekends, and holidays
- Willing to travel and participate in training as recommended or required
- Must have a valid and current State Driver’s License and an insurable driving record for purposes of driving company vehicles
- Must have an Illinois Gaming Badge (or the ability to obtain and maintain a Badge) issued by the Illinois Gaming Board as a requirement for this position
Base Pay:
- Pay range - $57,900.00 - $75,500.00 (The base pay will depend on factors such as experience level and skillset.)
